Nuts, Seeds, and Dried Fruits – Perfect Energy Combo

Last weekend I overslept and didn’t have enough time to eat much before heading out on my long run. Fortunately I had made a batch of bite-sized “energy” balls a couple of days earlier and just one of these powered me through most of my run (I had some Hammer Sustained Energy to help keep me going too).

These “energy” balls also came in handy after our family hike last Saturday; I took a few with us in case we got hungry and while we didn’t eatĀ duringĀ the hike, they were the first thing we went for as soon as we got done. My husband is somewhat picky but he was quite impressed with these, as were a couple of girlfriends who had sampled them the evening before at a small social gathering.

Packed full of healthy nuts, seeds, and dried fruits, these are the perfect energy snack for any occasion – give them a try.

Ingredients:

1/4 cup pistachios; 1 tbsp sesame seeds; 2 cups mixed nuts and seeds (eg. almonds, walnuts, flaxseed, sunflower seeds, pepitas); 2 cups dried fruit (eg. dried apricots, dried cranberries, dates, figs); grated zest from one medium orange; 1 tbsp peanut or almond butter; 1 tbsp honey, 1 pinch sea salt

Directions:

1. Place pistachios in a food processor and process until finely chopped. Combine with sesame seeds in a bowl and set aside.

2. Add nuts, seeds, and dried fruits to processor and process until finely chopped. Add zest, nut butter, honey and salt and process several more times. When the mixture is ready, it will begin to clump together and pull away from the sides of the bowl.

3. Remove mixture to a bowl and knead briefly to consolidate. Pick up about 1 heaping tbsp of the mixture and squeeze tightly in one palm. Roll into a ball, drop into pistachio-sesame seed bowl and roll to coat.

4. Refrigerate for 15 minutes to set. Store in airtight container.
